I made the best roasted beet salad this weekend. It's very simple and quite delicious. Just roast beets and garlic in the oven, separately. Let them cool.
Whisk up the garlic with fresh squeezed lemon juice and emulsify the delishness with extra virgin olive oil, and set aside.
Cut up an orange and some green onions. Then cut the beets into chunks. The most gorgeous color will spill out all over your cutting board. You have to be OK with that. Just revel in the beauty.
Put the beets into a bowl and toss in the orange pieces. Give them a little stir and watch the beet juice wash over the oranges, creating the color of a dramatic sunset. Take a breath. Take a photo. Then toss in the onions and some walnut halves.
I added blue cheese crumbles because I didn't have any feta on hand. I was a little concerned that I was getting a little crazy with all the flavors, but it turned out exquisite.
Drizzle the lemony garlic dressing over the top, and punctuate the process with a dusting of parsley.
Then just eat it. Well, maybe first take another photo of the finished look and post it on Instagram, cuz why not.
