This is the perfect soup for this very blustery day. It is pouring rain outside and I am all cozy in my snug apartment, enjoying this homemade curried cauliflower kale soup (recipe from Cotter Crunch).
This plan started to materialize yesterday, when I read the weather report. Heavy rain, wind, and flash flood warnings all day. I love staying home and cooking/baking when it rains. Listening to the rain and wind is one of my favorite things to do, especially when there is something delicious simmering on the stove.
I found the recipe on Pinterest. It's paleo and vegan friendly, and so easy to make. The curry powder, coconut milk, and chili flakes are the stand-out flavors, and I love the way it all goes beautifully with carrots, onion, garlic, and cauliflower. The crunch of the kale is a lovely touch!
I'll let you refer to her site for the recipe, but basically this is what you do.
Break up a head of cauliflower into little florets. Toss them in a bowl with olive oil, curry powder, garlic powder, cumin, paprika (I used Smoked Spanish Paprika from Penzeys, my absolute favorite), and sea salt. Bake them at 400 degrees Fahrenheit for about 20 minutes, then set aside. When cool, chop up in a food processor until it resembles rice.
Saute in olive oil some chopped red onion and minced garlic for a few minutes, then add vegetable broth, the cauliflower rice, coconut milk, chopped carrots and kale, chili flakes, and black pepper.
